Is it possible to expand on the current fields with additional data points?

Yes, you can use read-only user groups to expand on existing data points. You can find this option under the Team tab — just click on the + Plus sign on the top right, set the State change to no permission, and everything else to read permission. And you're all done and ready to add as many new fields as you like.
